As much as I absolutely love a traditional cole slaw, I like this recipe even better! It is so light and fresh and tangy and crunchy and delicious. You can make it in advance, and it doesn’t wilt in the fridge or in the hot sun at a summer barbecue. Give it a try!
Ingredients
1/2 head green cabbage, finely shredded
3 medium carrots, grated
1/2 medium white onion, diced
1-2 tbsp celery seeds
Salt
Olive oil
Apple cider vinegar
Dijon mustard
Mix cabbage, carrots, onions, and celery seeds. Dress with salt, olive oil, apple cider vinegar, and a little bit of Dijon mustard. Taste it, if it’s not tangy enough add a little more vinegar. Serve and enjoy!
