Jalapeño Cheddar Sourdough

Ingredients
Dough:- 3 cups flour
- 1 ½ cups water or whey
- 1 tsp mineral salt
- ½ cup active sourdough starter
- 1–2 jalapeños, diced
- 1–1 ½ cups shredded cheddar cheese
Instructions

Mix Dough:
Combine flour, salt, starter, and water/whey. Mix until a rough dough forms. -
Let Rest (24-Hour Ferment):
Cover the bowl and let the dough rest for 24 hours at room temperature. This slow ferment gives amazing flavor and digestibility. -
Add Jalapeño & Cheddar:
After the 24-hour rest, gently fold in the cheese and jalapeños. -
Shape:
Shape dough into a round loaf and place in a floured bowl or banneton. -
Preheat Oven:
Set your oven to 450°F with a Dutch oven inside to heat up. -
Bake:
Carefully place the dough into the hot Dutch oven, score the top if you’d like, and bake:- 30 minutes covered
- 15–20 minutes uncovered until golden brown

Cool:
Let cool at least 1 hour before slicing.
