Ingredients

  • 3 cups warm water (not hot)
  • 2 tablespoons yeast
  • ⅓ cup sugar
  • 1 tablespoon mineral salt
  • 2 eggs
  • 6 cups flour (start here, add a little more if needed)

Instructions

  1. Activate the yeast
In a large bowl, combine warm water, yeast, and sugar. Stir gently and let sit 5–10 minutes until foamy.
  2. Mix the dough
Add eggs and salt. Stir to combine.
Gradually mix in flour, one cup at a time, until a soft dough forms.
  3. Knead
Knead by hand or mixer for 5–7 minutes until dough is smooth and elastic. Add a little flour if sticky, but don’t overdo it.
  4. First rise
Cover and let rise in a warm place for 60–90 minutes, until doubled in size.
  5. Shape
    Punch down dough.
    • Divide into 10 equal pieces for hamburger buns
    • Shape remaining dough into a loaf and place in a greased loaf pan
  6. Second rise
Let rise again for 30–45 minutes until puffy.
  7. Bake
    Bake at 375°F for:
    • Buns: 15–18 minutes
    • Loaf: 25–30 minutes
      Until tops are lightly golden.
  8. Cool & enjoy
Brush tops with butter if desired. Let cool slightly before slicing.
